Enjoy handmade pasta at Trattoria Minoura, which has reopened near Bukkoji Temple.

April 14, 2021 open

Trattoria Minoura used to be located in a corner of Gion and was one of the leading Italian restaurants in Kyoto. After operating for exactly 20 years, including the time before relocating, the restaurant closed in 2016 for a new outlook and entered a period of recharging. About five years later, in 2021, the restaurant was relaunched in a new location.

We used to have a closed kitchen, but now we wanted to be closer to our customers. I couldn't find a place that satisfied me, so I was closed for a longer period of time. While I was absent, I did not cook as much and did physical labor," laughs Minoura, the owner of the restaurant.
The restaurant stands quietly at the end of a long approach and has the atmosphere of a hideout. A large counter allows customers to enjoy conversation with Mr. Minoura while watching food being prepared in front of their eyes.

Trattoria Minoura Tagliatelle

All dishes are examples from the 8,000 yen course. Tagliatelle with prawns, leeks and shallots. The tagliatelle is made with Yumechikara 100% flour, egg yolk, and water to achieve a firm texture, and is the restaurant's signature dish.

Minoura's crisp movements behind the counter as he finishes one dish after another shows no sign of age. It was a little tough at first, but I'm getting back into the swing of things," he said. The restaurant offers a course menu, and the specialty is the homemade pasta, which is all handmade. I wanted to recreate the taste I had in Italy, so I tried different flours," he says.

The smoked appetizer platter consists of four types of salmon, tuna, duck, and monkfish squid smoked by the chef himself. The rich smoked flavor of this dish is sure to make your wine go down a treat.

The smoked appetizers and desserts are all homemade. Enjoy a course filled with techniques honed over many years of experience, along with a glass of wine.
