Lots of fans! [Dried Sardine Chinese Soba Kato] Dried Sardine Soba

March 22, 2021 open

Mr. Kato, the founder of "Phantom Chinese Soba Noodle Kato Restaurant," which at one time had 11 restaurants and established niboshi ramen in Kyoto and Shiga, is hard at work preparing his noodles. For some reason, he and his wife restarted their business five years ago, and due to the Corona disaster, they rented a store in Kusatsu, moved to Yamashina at the end of the year, and served boiled and dried noodles. This March, he finally opened his own restaurant in Higashino. Even now, fans come from Kusatsu by train to try his niboshi soba, and once you try it, you will never forget it. The restaurant also offers Niboshi Black, which uses sashimi soy sauce as a dipping sauce, and limited-edition noodles. The photo shows Niboshi Soba (ordinary) 780 yen. The soup is made from kelp and dried sardines, and the noodles are medium-thick and straight. [The "Mabochu" (Chinese noodle), limited to 10 servings a day, is also a must-try at 830 yen.
