Everyone who loves udon knows the famous udon store Yamamoto Menzou. The long lines that form even before the store opens are a common sight among the locals. Mr. Yamamoto passionately kneads, cuts, and boils his udon noodles, which are firm and resilient, and go perfectly with the bonito-flavored broth.
