The editorial team steadily visited Shiga over and over again. Each time we encountered a wonderful restaurant, we were stimulated and made discoveries. What I like about Shiga...the magnificent Lake Biwa, of course, but also the abundant nature, the delicious food made with abundant ingredients, the time that flows slowly, the relationships with the people who make the food, and the warmth of the people. These are the feelings that have developed over the course of these days. I wanted to create a book that would allow the reader to touch the real faces of the people who live in Shiga. This book is filled with gourmet and fun information that you will want to tell someone about.
