The course also includes a rich and deep-tasting soup made with Perigord chestnuts, sautéed pecoros, and vegetables baked in a 200 degree oven for two hours.

For both vegans and non-vegans to enjoy at the same table, the main course will be a choice of pie crust baked with beet and plant-based meat or roasted Wagyu beef, and for dessert, a white tarte tatin inspired by the image of snow falling on the ground.
