After six years of training at the popular Udon Shin restaurant in Shinjuku, Tokyo, the owner, Mr. Aoki, opened O-udon Hajime in his hometown of Gojo Higashinotoin, Kyoto. The name of the restaurant was chosen because it is a new form of the Manzara Group, a popular izakaya (Japanese style bar) in Kyoto, and because the owner's name has the character "ichi" in it.
The interior of the restaurant, which makes use of a traditional Kyoto townhouse, has an open kitchen, and counter seats allow customers to watch udon noodles being boiled right in front of them.
