懐石料理など和食一筋で修業を積んだ上川さんが、和食を「堅苦しくなく、身近に楽しんでもらえたら」とオープンした［一凜］（京都府京都市下京区）。築100年の京町家を改装した店内は、駅からすぐと好立地ながら静かに過ごせるほっとする空間だ。

一凜昼御膳2500円。日替わりのおばんざい5種と、だし巻き、焼き魚、お造り、天ぷら、茶碗蒸し、ごはん、味噌汁と充実の構成

複数の小鉢が並ぶお昼の御膳は、皮目を炙ったお造りや餡をかけた茶碗蒸し、ふっくら焼き上げた魚など、どれも丁寧な仕事ぶりが伝わるもの。食材はもちろん食器からも季節を感じられ、美しい盛り付けにも心が躍る。

これまでの経験から「厨房で仕事をするよりも、お客さんの顔が見たい」と、カウンター形式の店にしたそう。

さまざまな味わいや口当たりが揃う日本酒は、唎酒師でもある店主のセレクト。夜は旬の食材を活かした一品料理も並ぶので、相性の良いお酒を相談しながら味わうのも楽しい。2Fには座敷とテーブル席の個室もあり、一人飲みから食事会まで幅広く利用できる。
