The dish is from the 3800 yen course. Grilled sea bream x salted malted rice and watercress sauce. Marinated sea bream that has been kombu-marinated and accented with sansho (Japanese pepper) and pickled vegetables. Shio koji sauce around it as well as watercress sauce.
