The restaurant's signature soup, which is also the "face" of the restaurant, is chicken shiratsuyu. We recommend the Ajitama Chicken Soba, which is made by cooking a large amount of chicken bones, momiji mushrooms, and aromatic vegetables until the collagen thickens, condensing the flavor of the chicken. It is a perfect match for the thin, straight noodles. The toppings, such as plenty of shiraganegi (green onions) and ajitama (soft flavored eggs), are beautifully arranged in the bowl.
