Mr. Yasui, who had many years of experience as a hotel pastry chef and boulanger, opened a long-awaited bakery on the first floor of his home. The reason I opened a bakery instead of a cake shop was because I thought bread was more affordable than cake and could be eaten easily every day.
At first, the store mainly targeted children and sold Danish-style cakes under the theme of ``cakes that can be held in the hand,'' but older customers requested red bean paste buns and housewives requested white bread.
