The Karasuma area is now home to two affiliate restaurants of Menroku in Hirakata and Gion Duck Noodles in Gion, both of which focus on the deep flavor of duck. In a stylish subterranean space, you can enjoy duck dashi-soba and duck tsuke-soba, both of which are made with the specialties of the owner, a former French chef.
Floating in the light broth made by slowly simmering Japanese duck and aromatic vegetables together are homemade noodles made from a combination of whole wheat flour and stone-ground rye. Combined with the beauty of the bowl and the moistness of the duck loin chashu pork, one realizes that this is a new genre of soba noodles with duck broth rather than ramen. There is also duck shiranyu-soba, a thick broth made by cooking duck stock over high heat for a long time.
