Hitsumabushi at Chatoran, an old forest house in Shigaraki, Shiga

April 28, 2023 open

Kashogama, a four-generation pottery company in Shimizu, Kyoto, opened a villa in Shigaraki. The old thatched-roof house in the vast forest has been reborn as a friendly restaurant. The signature dish is the original hitsu-mabushi, which does not use eel. You can choose from the most popular roast beef, low-temperature-cooked Omi chicken, or seasonal fresh fish, and it comes with an assortment of four different appetizers that change weekly.

Originally, the owner, Mr. Ohara, specialized in takeout of prepared foods and chiffon cakes, and after a meal, he recommends the chiffon cakes, which have long been a favorite of his customers. The cakes are so juicy that they make a sizzling sound when torn into pieces, and are available in matcha and roasted tea flavors kneaded with Asamiya tea, a specialty of Shigaraki.
