Passing on the seasonal flavors of Lake Biwa to the next generation [Uotomi Shoten]

Ukimido, known for "Kata no Ochigami", one of the eight scenic spots of Omi, is right in front of the restaurant. Uotomi Shoten, a tsukudani (food boiled in soy sauce) store, is located so close to Lake Biwa that you can almost hear the sound of the waves. The shop purchases lake fish from the nearby Kata fishing port and prepares it immediately. Within an hour of landing, the fish is softly cooked with soy sauce and sugar.

During the current season, ayu fish, shrimp, and gori (gizzard fish) line the store's refrigerators. We adjust the flavors with modern sensibilities," says fourth-generation owner Hisashi Takehata.

The store was renovated in July of this year, and the goodwill and product labels have been redesigned with a friendly pop design. Every part of the store is filled with the desire to preserve lake fish for the next generation.
