Homemade fermented seasonings are also used to great effect in side dishes such as flavored eggs pickled in soy sauce koji and pickles made with vinegared koji. The proprietress, who says, "Now that I have finished raising my children, I enjoy growing fermented foods," will tell you about the flavors you are interested in without revealing anything about them.
