A popular curry restaurant in Ikeda City, Osaka, has opened its second branch in Kyoto, the owner's hometown. The owner, a smoked pork lover, thought of a dish that goes well with smoked pork and came up with curry. The pork belly is seasoned with black pepper and cloves, cured for 72 hours, and then slowly smoked at about 80 degrees Celsius using cherry blossom smoke and peat.
The roux is made to suit the smoked pork and is European in taste, based on the flavor of fried onions and savory vegetables. Cardamom is used to give the dish a spicy flavor that comes on slowly afterwards. Take-out is also available.
