京都の酒蔵3蔵の垣根を超えた「アッサンブラージュ」によって誕生したAssemblage Club KOKA-古花-（こか）。アッサンブラージュとは混ぜ合わせを意味するフランス語で、ワインやシャンパーニュ造りの過程で伝統的に行われるブレンド技法のこと。古花は、メープルシロップやコーヒーリキュールのような甘い香りに、醤油や紹興酒を思わせる香りが重なり合うのが特徴。さらに、ウイスキーのような複雑さとほのかな苦味が全体を引き締め、奥行きのある味わいに仕上がっている。煮込み料理など、濃厚なメイン料理とのペアリングがおすすめ。
