[Tadanari Uji Pudding is a pudding specialty store that opened in 2020 in the Osaka-ya Market, a retro market in the Ujibashi-dori shopping street. It was created as a sweet brand of WABISUKE, a poultry farm located in the Uji Kanaiido Chicken Farm Complex. The store's name is derived from the word "tadanari," meaning "as it is," which appears in the book "Uji Jucho" (The Ten Books of Uji). The name expresses the wish for customers to "taste the original deliciousness of eggs" through sweets made with fresh eggs produced by WABISUKE.
All eggs used for pudding are laid by hens. Heifer hens are raised in a stress-free environment where they are free to move around in the henhouse, and are characterized by their muscularity and firmness to the touch. Feed, which also determines the taste of eggs, is carefully selected and limited to non-GMO corn, soybeans, and other grains. The eggs laid by hens raised on high-quality feed and given plenty of exercise are of high quality and rich in flavor. [The pudding at Tadanari Uji Pudding uses two types of eggs: "Yadorigi Plain," from hens fed on 100% vegetable feed, and "Yadorigi Thick Tangled King," whose feed contains krill, which contains high levels of astaxanthin, a red pigment that gives the egg yolks their red color and richness. The taste of each egg has its own unique flavor. The pudding made with local ingredients is a perfect souvenir of Uji.
