8.A word from Mr. Tokubei Masuda, Chairman of the Executive Committee

Sake is not only delicious when it is new, but as documents from the Edo period show, sake also has a valuable taste that expands even after aging, and the world is now beginning to realize this. Various efforts are being made throughout Japan to try new rice and yeast, organic and natural approaches, aging in barrels, assemblage, etc., and even after the sake brewing process was almost completed in the Edo period, it is still under development.
At the same time, the sake industry is now entering a new phase, with the spread of craft brews that include a variety of secondary ingredients such as herbs and fruits. The fusion of sake, a traditional culture and industry that Japan is proud of, and NFT's technology is truly interesting. I am also excited about the challenge of "turning sake into drinkable assets. In the world of wine, there is already a long history of the formation of the asset aspect, and I am also looking forward to the development of the SAKE economic zone through the development of a secondary distribution market.
Fun to drink, fun to age, and fun to hold. We still have a long way to go in our efforts to maximize the value of sake, but we hope you will bear with us.
