［京都府立植物園］のすぐそばにオープンしたカフェ［こころキッチン京都本店］（京都府京都市北区）。“発酵×ウェルネス”をテーマに、酵素玄米のおむすびやグルテンフリーのスイーツなどを提供している。

静岡県生まれの店主・江藤さんは、東京で会社員として働きながら自宅で季節の食材やダシを使った料理教室を主宰。その後海外に移住し、活動を続ける中で日本食が世界で愛されていることを実感したという。やがて「もっと日本の伝統と食文化をリアルに伝えたい」という想いが芽生え、世界中の人が集い、かつ旦那さんの故郷でもある京都に店を構えることに決めたそう。

築50年の古民家を改装した店は、自然光が降り注ぐ温かな空間。和の趣でありながら、北欧テイストの椅子やテーブルが並ぶ。改装中の2Fでは、今後味噌や発酵調味料作りなどの料理教室を行う予定だとか。

米粉のパンケーキ豆乳甘酒ホイップと発酵フルーツ添え1350円。しっとりとした口当たりのパンケーキには別添えで発酵フルーツと菊芋ハニーが付く

取材中にも続々とお客さんが訪れ、すでに近隣の住民や観光客など多くの人に愛されている［こころキッチン］。ランチやカフェにふらりと立ち寄ってみては。
