2026年1月24日（土）に、ヴィーガンパンのテイクアウト専門店［MERCY Vegan Bakery（メルシーヴィーガンベーカリー）］（京都府京都市南区）がオープンした。
「できるだけ体にやさしいものを選びたい」「食の制限があっても、パンを楽しみたい」という声に寄り添い、提供されるパンはすべて植物性100％。朝食やランチにぴったりな食事パンや総菜パンをはじめ、おやつに嬉しいドーナツや甘いパンまで、毎日30種類以上が店頭に並ぶ。焼きたてならではの香りと味わいを大切にしており、数量限定で売り切れ次第終了となる。
