京都・伏見にある人気のダシ専門店［京都離宮］の新店舗が2025年5月12日（月）に京都駅にグランドオープンした。5本の鉄鍋を一斉に操るだし巻き職人のライブパフォーマンスや、天然素材を使ったダシの飲み比べ体験などを通じて、香り・音・味・職人技といった五感で和だし文化を体験できる“おだしの劇場型ストア”だ。
