Enjoy Kaku-uchi style at Maenota in Ta...
November 30, 2024: Open
A café called [FÅ/ment] (Shimogyo Ward, Kyoto City, Kyoto Prefecture)—a renovated former warehouse—has opened just a 7-minute walk from JR Tanbaguchi Station. In addition to enjoying meals made with koji, visitors can also purchase flowers at the [FÅ] flower shop located within the same space.
[FÅ] stands for the first letters of “flower” and “architect.” The “Å” represents an angstrom—0.1 nm (nanometer)—an extremely small unit of measurement, symbolizing a commitment to meticulous attention to detail in both spaces and products. The interior, which blends traditional Japanese elements into an industrial space, exudes a modern and soothing atmosphere. The moment you step inside, you’ll be drawn into the world created by [FÅ].
Lunch set: 2,200 yen. Includes a main dish, side dishes, soup, and koji-pickled items. The hamburger steak is made with koji, giving it a fluffy, tender texture and a mild flavor.
The lunch menu features a selection of dishes centered on fermented foods—a choice the restaurant arrived at after focusing on the body’s circulation. They serve koji-based dishes made with homemade fermented condiments that are easy on the stomach.
The delicate and complex flavors of the dishes—simple yet crafted with great care—are truly one-of-a-kind. Another appealing feature is the generous use of local ingredients, such as Kyoto vegetables.
Gathering around a large table with a marble and acrylic top, you’ll find your senses stimulated as you enjoy your meal, creating a truly special experience.
