Last fall, a new restaurant opened in the Shin-Omiya Shopping Arcade, which is bustling with mainly local residents, offering Western cuisine based on Spanish cuisine mixed with French and Italian dishes. The owner, Hiroki Ioka, is the master of the restaurant. Hiroki Ioka, the owner of the restaurant, says, "I opened the restaurant far from the city center so that local people can enjoy the cuisine at a leisurely pace. I had the longest experience at a Spanish restaurant, so I serve creative Western cuisine with the essence of Spanish cuisine. The restaurant is by reservation only, but children are welcome at lunch time. I am now a father myself, so I hope people of child-rearing age can enjoy the restaurant as well," he says.
The cuisine uses mainly suburban ingredients such as seafood from Wakayama Prefecture, pork from Gojo in Nara, and vegetables from Higuchi Farm in Takagamine and Yamada Farm in Fushimi. These carefully selected ingredients are transformed into dishes that make full use of the ingredients and the chef's own skills, such as Kyoto duck terrine that makes use of his experience at a charcuterie restaurant, and Spanish risotto with kujo leeks, a dish that adds a Kyoto flavor based on his experience at a Spanish restaurant.
