The owner, Mr. Mori, who used to be well-known in Ichijoji and now continues to make bread only on Fridays and Saturdays. The breads in the showcase are basically hard breads. Natural yeast made from apples, carrots, and yams is combined with Nanbu wheat from Iwate Prefecture, which has a strong flavor, to create firm, strong bread.
