Kyoto Brewery was established near Toji Temple by three people of various nationalities: Ben from Wales, Chris from the U.S., and Paul from Canada. With the concept of "just make the beer you want to drink," these three beer lovers are taking on the challenge of brewing a new style of beer that is not bound by common sense or existing frameworks.

[Kyoto Brewery's beer brewing is based on the Belgian tradition of diverse brewing and the American pioneer of craft beer. The brewery combines the best of both beers, using mainly Belgian yeast and American hops. [The result is a beer with a unique flavor unique to Kyoto Brewery. For example, their signature product, "Ichiki Ichikai," combines Belgian yeast and modern hops and follows the Belgian saison beer style. It is dry and easy to drink, with a perfect balance of malt, hops, and yeast without being too assertive, making it a beer that is suitable for all occasions.

The beers are also characterized by their unique names. The "Ichigeki Ikkai," which expresses the desire to do one's best at every step of the brewing process, and "Kuroshio no Ashiwari," a black beer that not only evokes color but also compares the global trend of craft beer to the powerful current of the Kuroshio Current. The name "Kuroshio" is also captivating with a story behind it.
