Kyo Ryori Kaji uses famous water from "Shigenoi," one of the seven famous water sources in Kyoto, which is pumped from the premises of the restaurant, to bring out the original flavors of the ingredients. The two-tiered stacked dish, which was created in response to customers who wanted to enjoy a variety of flavors, contains 45 New Year's delicacies, including tender simmered abalone. The osechi is finished with a Kyoto-like appearance and coloring.
