[Dashi to Spice Kitchen Asa (Nakagyo-ku, Kyoto City, Kyoto Prefecture) is a new restaurant near Nijo Castle. The owner, Mr. Kiyota, who has honed his skills at a Japanese restaurant for many years, opened the restaurant adding ethnic elements to Japanese cuisine based on his own love of ethnic food and his experience attending cooking classes. The base of his cuisine is Japanese, with a slightly thick broth made from kombu (kelp) and souda gatsuo (dried bonito), and a soft aroma of spices.
In the center of the blue-gray interior is a large table that looks like a dining table, giving the impression that you are visiting someone's home. At the same time, the artisanal vessels and interior design give off a sophisticated atmosphere, perfectly matching Kiyota's goal of creating a space "between a store and a home. The name of the restaurant, "kitchen," was inspired by her grandmother, who was a good cook.
All photos are from the 5500 yen course. Summer vegetables cooked with broth is a dish that lets you enjoy the flavor of the broth.
The only dish available is an 8-course omakase course for 5,500 yen. The main dishes change with the seasons, and currently Thai-style grilled chicken, duck hamburger steak from October, and oden are scheduled for the cooler months, so look forward to those as well. Walk-ins are welcome, but reservations are recommended.
Thai-style grilled chicken is served with your choice of fish sauce, chili pepper and lemon juice. Homemade spiced plum syrup (soda) 770 yen is made by marinating Nanko plums in millet sugar, chili peppers, ground pepper, gloves, and pepper grains.
Chicken broth pho is served as one of the endings of the course. Topped with your choice of pak choi served separately.
