The owner, who hails from Kagawa Prefecture, known as Udon prefecture, makes his own homemade noodles, and this popular restaurant is known for its noodles that go down smoothly. The secret to the delicious taste is to let the dough, which is made from a unique blend of flour from Hokkaido and Kyushu, rest overnight at a low temperature. This process brings out the smooth texture of the noodles.
