[Kyoto Yamaroku, which has been in business for more than 90 years and manufactures Saikyo pickles, has opened its first restaurant on the basement floor of JR Kyoto Isetan. Inspired by Kyoto Yamaroku's traditional miso floor and barrel miso, the concept of the restaurant is a space with miso barrels. The warm-colored walls kneaded with real miso give a soft impression. While chic and modern Japanese style, the round-table counter where customers enjoy their set meals is nostalgic and relaxing.
Kyoto Yamaroku's Saikyo zuke uses a traditional miso bed and barrel miso, in which fish is carefully selected by craftsmen and custom-made Saikyo miso is used. The fish is then marinated for two times to give it a mild and rich flavor. All set menus come with three small bowls of cooked food, rice, miso soup, and pickles in addition to the saikyo-yaki.
