The Yamakuni area of Keihoku is located in the headwaters of the Katsura River in the northwestern part of Kyoto City. The Yamakuni Sakigake Center, established by local residents, uses ingredients grown in the rich natural environment of Keihoku to produce and sell natto rice cakes and other specialty products. The natto rice cake is made of large natto (fermented soybeans) with salt and wrapped in a rice cake with a mallet made from local glutinous rice. The rice cake is palm-sized and easy to eat. It is named \"Amigasa-mochi\" because of its shape, which resembles a woven straw hat. The mochi is covered with soybean flour made from our own soybeans and rich in the blessings of Keihoku, which enhances the taste of natto by adding a hint of soybean flavor. Since the natto mochi is delivered frozen, it is best to enjoy it by roasting it on a hot plate, pan fryer, or shichirin (a charcoal griddle) after thawing it naturally.
