Tsukinowa Bagel: Exterior View

Tsukkiwa Bagel, a specialty bagel store in Tofukuji that brings smiles to people's faces with its perfectly round bagels.

June 1, 2024: Open

Mr. Tanaka, the owner, whose passion for bagels led him to run “Kurashi-zukuri Bagel & Coffee” in Koriyama City, Fukushima Prefecture, for about five years, is now making a fresh start in the town where he was born and raised. The shop’s name, “Tsukino-wa,” is derived from a local place name, and Mr. Tanaka says it has a special resonance for him.

About 20 varieties of bagels are charmingly lined up in the display case of this shop, which is housed in a renovated traditional Japanese home. Made without eggs, milk, or butter, they draw on the natural strength of their ingredients—such as Shirakami Kodama yeast, Hokkaido-grown “Yumechikara” wheat flour, and sugar from Amami.

In particular, the Shirakami Kodama yeast—originally from Akita—which brings out the wheat’s aroma and sweetness to the fullest, is an indispensable ingredient in [Tsukinowa Bagel]’s bagels. We take great care to ensure they have a beautiful, round shape and a perfect golden crust, so you can enjoy a firm, chewy exterior and a soft, chewy interior.

The “Salted Kelp & Shiso” bagel—said to have been created based on a staff member’s idea during the Fukushima era—is a richly flavorful treat made by topping a plain bagel with salted kelp, chopped shiso, and cheese. The “Milk Tea” bagel features white chocolate hidden within dough blended with Earl Grey tea leaves. It’s recommended to warm it until the chocolate melts before eating. The Croque-Monsieur is generously topped with a creamy, homemade béchamel sauce and prosciutto. It features onions from Koriyama’s brand-name vegetable program.
