From Saturday, September 19, 2026, through Saturday, October 31, 2026, the “100 Years of Beloved Everyday Dishes: Wakasa Obama Soy Sauce-Dried Fish Fair 2026” will be held in Obama City, Fukui Prefecture.
In Obama—a city where fish from the Wakasa region are plentiful—"shoyu-dried fish" has long been a beloved home-style dish and is a hidden local specialty that pairs well with both rice and sake. Made using a traditional method in which fish is marinated in a soy sauce mixture and dried overnight, it is characterized by the rich, savory aroma of soy sauce that fills the air when grilled, and a plump, tender texture that brings out the fish’s natural umami. Since various seasonal fish—such as mackerel, small sea bream, horse mackerel, and conger eel—are used, we recommend trying them all to compare the flavors.

This fair is a promotional campaign in which participants who taste “Wakasa Obama Shoyu-dried Fish” at participating restaurants in Obama and fill out a questionnaire will be entered into a raffle to win local specialty gifts.
Since the fair was held last winter, the number of participating stores has increased, and this time, 15 stores are taking part. In addition to restaurants serving set meals, you can also enjoy soy-cured fish at izakayas, so take this opportunity to experience its rich flavor and charm.

<How to apply
To enter the contest, simply scan the QR code on the back of the “Shoyu-boshi Card”—which you’ll receive when you try shoyu-boshi at participating fair venues—and complete the survey. A total of 20 winners will be selected by lottery to receive gifts such as local specialties from Obama.
