Unlike typical manju, this semi-moist confection features a secret recipe for chewy dough that perfectly complements the coarse-grained Tamba Dainagon red bean paste—just one bite is sure to put a smile on your face. “Ajari” is a Sanskrit term meaning “high-ranking monk.” It is said that the confection was named “Ajari Mochi” because its shape resembles the straw hat worn by monks during their spiritual training.

Two types of dough, including Japanese brand flour and Houkasa, are kneaded with flavorful butter and pomegranate to create a crispy, mouth-watering texture. The cream is blended with condensed milk to create a richer, more aromatic flavor than before. Another popular product is the Hime Senju Senbei Organic Matcha, which uses Uji matcha, a specialty of Kyoto. Shogoin Yatsuhashi is said to have originated in 1689 (Genroku 2) at a tea house in the Shogoin forest, where it was sold in memory of Yatsuhashi Kengyo, the founder of early modern koto music. Its simplicity—made with rice flour, sugar, and flavored with nikki—has made it a popular and beloved Kyoto souvenir for over 300 years. In November 2025, a new product—small-packet wasabi—will be released for the first time in about 10 years. Enjoy a new and unique harmony where the spiciness of wasabi gives way to the sweetness of sugar and the aroma of nikki.
