Starting Tuesday, October 21, 2025, [Marugame Seimen], a Sanuki udon specialty chain dedicated to handmade, freshly prepared udon, is running a campaign called “Wagamachi Udon 47,” which features region-exclusive menu items that highlight the culinary cultures and ingredients of Japan’s 47 prefectures.
Based on more than 300 recipes submitted by noodle artisans from across the country, the company conducted repeated test runs over the course of about one year, resulting in the creation of 47 completely new products. You can enjoy regional specialties packed with the unique flavors of each prefecture.
In Kyoto, a dish called “Kinugasa-style -Style Udon with Egg Sauce” has debuted in Kyoto—a Kinugasa-style dish featuring tempura made with local Kyoto ingredients topped with an egg-based sauce. Meanwhile, in Shiga, “Junjun-Style Bukkake Udon” has made its debut, packed with the delicious flavors of the local hot pot dish “Junjun.” Be sure to try these special bowls of udon, brimming with the udon artisans’ “love for udon” and “love for their hometown.”
